It All Started with an Erasmus Scholarship: Johan's Culinary Adventure in Limburg

JOHAN

A young chef who left his home in Spain to embark on an exciting adventure in the Netherlands. In this interview, Johan shares the challenges he has faced, and the valuable lessons he has learned along the way.


How long have you been in the Netherlands?

I’ve been living in the Netherlands for 2 years and 4 months.

What brought you here?
I came through the Erasmus program thanks to one of the courses I completed at the Carlos Oroza Hospitality School in Pontevedra, in collaboration with TRIBE NL. Additionally, I was excited about the idea of leaving Spain and exploring other cuisines.

How was the beginning? What was the most challenging?
Initially, the most challenging aspect was the language. My English level wasn’t good enough, but over time, I improved and eventually managed to understand and communicate better.

What qualifications and professional experience did you bring to the Netherlands?
I am a Higher Technician in Kitchen Management and a Technician in Bakery, Pastry, and Confectionery. My previous professional experience includes working during the summers in restaurants in Mallorca while continuing my studies. I have also worked in various events and as an extra in restaurants in Pontevedra.

Where do you work currently?
I work at Château St. Gerlach, as a breakfast cook. Château Sint Gerlach is a luxurious hotel located in an elegant historic castle in Limburg, Netherlands.

What do you like most about working in the Netherlands?
I greatly appreciate the respect for work hours and days off, which allows me to have more time to travel and discover the wonders that this country has to offer.

What do you think about life in the Netherlands? And the Dutch people?
I find life here quite peaceful, except during holidays, which are very lively and fun. As for the Dutch people, they are very polite and friendly; they always greet you with a smile, which is very pleasant.

What do you enjoy doing in your free time? Any special recommendations for places to visit?
It depends on the weather and how much free time I have. Sometimes I stroll around Maastricht, and other times I drive to a nearby city. My advice is to explore as much as possible; there are wonderful places to suit all tastes.

Favorite Dutch product?
In Limburg, there are traditional tarts called ‘Vlaai’ that I love, especially the cherry one.

Favorite Dutch word?
My favorite word is "lekker." It is used to describe something tasty, good weather, having a great time, or to express that you like something or someone. It’s a very versatile word.

How do you find getting around by bicycle?
At first, I was a bit scared, but eventually, I got used to it. However, after buying a car, I no longer feel like using the bike.

Would you recommend this experience to other foreigners?
I recommend it 100%, but always with an awareness of where you are and what you are looking for.

What advice would you give to someone moving to the Netherlands?
Be patient, as finding housing is challenging but not impossible. Also, be open-minded and don’t hesitate to ask for help when needed. TRIBE NL is always ready to assist and advise.

Has moving to the Netherlands allowed you to achieve any personal or professional goals? Which ones?
It has allowed me to prove to myself that I am brave and capable of achieving everything I set my mind to. Professionally, I am still working on reaching my goals.

What new learnings are you acquiring in the Netherlands that could boost your professional career?
I am learning many things: working as a team, staying calm in certain situations, becoming more self-reliant, communicating clearly, and, above all, being a kinder person.

Anything else you’d like to share?
Improve your English level, and then venture out to travel and enjoy. It may seem intimidating at first, but often what scares you is where you learn the most. Stay motivated; everything is achievable!
